Description

These Turkey Taco Stuffed Sweet Potatoes make a delicious and nutritious meal, combining tender sweet potatoes with a flavorful lean ground turkey taco filling topped with melted pepper Jack cheese and fresh parsley. Ready in just 20 minutes, this recipe offers a perfect balance of protein, fiber, and bold southwestern flavors for a wholesome dinner.

Ingredients

Scale

Sweet Potatoes

  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1/2 teaspoon ground cumin
  • Salt and black pepper to taste

Turkey Taco Filling

  • 3/4 pound lean ground turkey
  • 4 garlic cloves, minced
  • 1 cup canned crushed tomatoes
  • 1 teaspoon chili powder

Toppings

  • Grated pepper Jack cheese, about 1/2 cup
  • 2 tablespoons flat-leaf parsley, chopped

Instructions

  1. Cook Sweet Potatoes: Microwave the whole sweet potatoes on high for 8 to 10 minutes until they become tender when pierced with a fork. Allow them to cool slightly before handling.
  2. Prepare Potato Flesh: Cut each sweet potato in half lengthwise and carefully scoop out the flesh into a bowl. Mix the flesh with olive oil, ground cumin, salt, and black pepper until well combined to add flavor and creaminess.
  3. Cook Turkey Filling: Heat a skillet over medium heat and add the ground turkey. Stir in minced garlic and chili powder. Cook, stirring occasionally, until the turkey is browned and cooked through, about 6 to 8 minutes. Add the crushed tomatoes and simmer for 2 to 3 minutes to blend flavors.
  4. Assemble and Broil: Spoon the turkey mixture evenly into the hollowed-out sweet potato skins. Sprinkle grated pepper Jack cheese on top. Place the filled potatoes under a broiler for 2 to 3 minutes until the cheese melts and turns bubbly and slightly golden.
  5. Garnish and Serve: Remove from the broiler and garnish each stuffed sweet potato with chopped flat-leaf parsley. Serve immediately while warm.

Notes

  • Microwave cooking times may vary depending on the size of the sweet potatoes and microwave power.
  • You can substitute ground turkey with ground chicken or lean ground beef if preferred.
  • Add extra toppings such as sour cream, avocado slices, or salsa for more flavor variation.
  • To make this meal gluten-free, ensure chili powder and canned tomatoes do not contain any gluten additives.
  • Leftover turkey mixture can be refrigerated for up to 3 days and used in wraps or salads.
