Teriyaki Sauce and Tofu

  • 1 cup Soy Vay® Veri Veri Teriyaki® Sauce (plus 1/4 cup for serving)
  • 1 package (14 oz.) firm tofu

Bowls

  • 4 cups cooked rice noodles or spaghetti noodles
  • 1 cup sliced carrots
  • 1 cup snap peas
  • 1 cup pineapple chunks
  • 2 green scallions, thinly sliced


Instructions

  1. Drain and Slice Tofu: Cut the tofu into 1/4 inch slices and place them on paper towels to dry and drain excess moisture for about 10 minutes, which helps achieve a better texture when baked.
  2. Marinate the Tofu: Arrange the tofu slices in a shallow dish and pour 1 cup of teriyaki sauce over them. Cover and refrigerate to marinate for 20-30 minutes, allowing the tofu to absorb the flavors.
  3. Preheat the Oven: Heat your oven to 375°F (190°C) to prepare for baking the tofu.
  4. Bake the Tofu: Remove tofu from the marinade and place the slices in a single layer on a baking sheet. Bake for 30 minutes, flipping the tofu halfway through to ensure even cooking and caramelization.
  5. Assemble the Bowls: Distribute 1 cup of cooked noodles into each bowl. Top with equal portions of the sliced carrots, snap peas, pineapple chunks, baked teriyaki tofu, and sliced scallions.
  6. Add Final Sauce: Drizzle 1 tablespoon of Soy Vay® Veri Veri Teriyaki® Sauce on top of each bowl for an extra burst of flavor. Serve immediately and enjoy.
