Instructions

  1. Prepare the filling: In a large mixing bowl, combine shredded cooked chicken, drained black beans, corn, diced bell peppers, sliced green onions, taco seasoning, and shredded cheese. Mix until all ingredients are well incorporated.
  2. Fill the egg roll wrappers: Lay an egg roll wrapper flat on a clean surface. Place a spoonful of the filling mixture in the center of the wrapper, ensuring not to overfill to allow easy folding.
  3. Roll the egg rolls: Fold the two opposite sides of the wrapper over the filling, then roll tightly from one remaining edge to the other. Seal the edge by moistening it slightly with water to ensure it sticks.
