Description

A quick and flavorful skillet dish featuring sautéed zucchini and mushrooms, enhanced with garlic, fresh parsley, and optional Parmesan cheese. Perfect as a healthy side or light main course.

Ingredients

Scale

Vegetables

  • 2 medium zucchinis, sliced into 1/4-inch thick rounds
  • 8 ounces button mushrooms, cleaned and sliced

Other Ingredients

  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • Salt to taste
  • Freshly ground black pepper to taste
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Prepare Ingredients: Begin by preparing all your ingredients. Slice the zucchinis into 1/4-inch thick rounds and clean and slice the mushrooms.
  2. Heat Oil: Heat the olive oil in a large skillet over medium heat.
  3. Sauté Garlic: Once the oil is hot, add the minced garlic to the skillet. Sauté for 1 minute, stirring constantly, until the garlic is fragrant. Be careful not to let it burn.
  4. Cook Mushrooms: Add the sliced mushrooms to the skillet. Cook for about 5 minutes, stirring occasionally, until they start to brown and release their moisture.
  5. Cook Zucchini: Next, add the sliced zucchini to the skillet. Sprinkle with salt and freshly ground black pepper to taste. Cook for an additional 5-7 minutes, stirring occasionally, until the zucchini is tender but still has some bite.
  6. Add Parmesan Cheese: If desired, sprinkle Parmesan cheese over the vegetables. Stir well until the cheese is melted and evenly distributed.
  7. Finish with Parsley: Remove the skillet from heat and sprinkle the chopped fresh parsley over the top to finish.
  8. Serve: Serve hot as a side dish or a light main course.

Notes

  • For a vegan version, omit the Parmesan cheese or substitute with a vegan cheese alternative.
  • Do not overcook zucchini to maintain its slight firmness and prevent sogginess.
  • Use fresh garlic for best flavor; avoid pre-minced garlic if possible.
  • Fresh parsley adds a bright flavor and should be added last to keep its color and aroma.
  • Adjust seasoning with salt and pepper according to taste.
