Instructions
- Prepare Ingredients: Begin by preparing all your ingredients. Slice the zucchinis into 1/4-inch thick rounds and clean and slice the mushrooms.
- Heat Oil: Heat the olive oil in a large skillet over medium heat.
- Sauté Garlic: Once the oil is hot, add the minced garlic to the skillet. Sauté for 1 minute, stirring constantly, until the garlic is fragrant. Be careful not to let it burn.
- Cook Mushrooms: Add the sliced mushrooms to the skillet. Cook for about 5 minutes, stirring occasionally, until they start to brown and release their moisture.
- Cook Zucchini: Next, add the sliced zucchini to the skillet. Sprinkle with salt and freshly ground black pepper to taste. Cook for an additional 5-7 minutes, stirring occasionally, until the zucchini is tender but still has some bite.
- Add Parmesan Cheese: If desired, sprinkle Parmesan cheese over the vegetables. Stir well until the cheese is melted and evenly distributed.
- Finish with Parsley: Remove the skillet from heat and sprinkle the chopped fresh parsley over the top to finish.
- Serve: Serve hot as a side dish or a light main course.
