Ingredients
Scale
Fruit
- 4 cups fresh pineapple, cut into chunks
- 1 jar maraschino cherries
Dry Ingredients
- 1 cup packed brown sugar
- 1 teaspoon cinnamon
- ½ cup granulated sugar
Other
- 1 – 10 oz pound cake
- ½ cup melted butter
- 10 roasting skewers for grilling or campfire
Instructions
- Prepare Pineapple: Cut the fresh pineapple into bite-sized chunks suitable for skewering.
- Coat Pineapple: In a bowl, combine the brown sugar and cinnamon. Toss the pineapple chunks in this mixture until they are evenly coated with the sugar and spice blend.
- Prepare Pound Cake: Cut the pound cake into cubes roughly the same size as the pineapple chunks to ensure even cooking.
- Butter and Sugar Coat Cake: Dip each pound cake cube in melted butter, then coat with granulated sugar to add sweetness and help achieve a crispy exterior when grilled.
- Assemble Kabobs: Thread the ingredients onto the skewers in the following pattern: cherry, cake, pineapple, cherry, cake, pineapple, continuing in this order until the skewer is full.
- Cook Kabobs: Grill the assembled kabobs over a hot grill or cook on a campfire, turning frequently to brown all sides evenly. Cook until the pound cake is golden brown and the pineapple is caramelized, approximately 8-10 minutes.
Notes
- Use sturdy skewers that will hold the kabobs without bending or breaking.
- If using wooden skewers, soak them in water for 30 minutes prior to grilling to prevent burning.
- Monitor the kabobs closely when grilling to avoid burning the sugar coating.
- These kabobs are best served warm for maximum flavor and texture contrast.
- Can be made with store-bought or homemade pound cake.
