Description

Quick and easy overnight refrigerator dill pickles that are perfect for a crunchy, tangy snack. These pickles require minimal cooking and develop their classic dill flavor after chilling in the fridge for at least a night. A perfect no-fuss pickle recipe that uses simple pantry ingredients and fresh cucumbers.

Ingredients

Scale

Pickling Brine

  • â…” cup distilled white vinegar
  • â…“ cup water
  • 1 ¼ teaspoons salt (plus more to taste)
  • 3 tablespoons sugar

Flavorings

  • 2 garlic cloves (whole)
  • 1 teaspoon black peppercorns
  • 1 pinch red pepper flakes (plus more to taste)
  • 3 dill sprigs

Vegetables

  • 4 cocktail cucumbers (each cut into 4 spears)

Instructions

  1. Prepare the Pickling Brine: In a medium-sized pot or saucepan, combine distilled white vinegar, water, salt, and sugar. Bring the mixture to a boil over medium-high heat, then reduce the heat to low and simmer for 2-3 minutes, whisking occasionally to ensure the sugar is fully dissolved. Remove the pot from heat and set it aside to cool slightly while preparing the jars.
  2. Assemble the Pickles in Jars: Place the whole garlic cloves, black peppercorns, red pepper flakes, and dill sprigs into the bottom of a 16-ounce mason jar. Arrange the cucumber spears vertically inside the jar, making sure they fit snugly.
  3. Add Brine and Refrigerate: Pour the warm vinegar brine over the cucumbers until they are completely submerged. If needed, add a little extra water to cover the cucumbers fully. Seal the jar tightly and place it in the refrigerator.
  4. Marinate Overnight: Refrigerate the pickles overnight or up to 3 days. The flavors will intensify the longer they sit, resulting in crisp, flavorful dill pickles ready to enjoy.

Notes

  • For crisper pickles, use fresh cocktail cucumbers and ensure they are fully submerged in the brine.
  • Adjust the amount of red pepper flakes to make the pickles more or less spicy based on your preference.
  • These pickles can be stored in the refrigerator for up to 2 weeks.
  • Use a clean, sterilized mason jar to increase shelf life and maintain freshness.
