- 1/2 cup milk, plus 1-2 tablespoons for cocoa drizzle
- 1 cup peanut butter
- 2 teaspoons vanilla extract
Instructions
- Prepare the Oats: Line a work surface with parchment paper and place the quick-cooking oats in a large mixing bowl ready for mixing.
- Make the Cookie Base: In a medium saucepan, melt the unsalted butter over medium heat. Stir in the granulated sugar and 1/2 cup milk. Bring the mixture to a boil and let it boil for one minute before removing it from the heat.
- Combine with Peanut Butter: Stir the peanut butter and vanilla extract into the hot butter mixture until smooth and fully incorporated. Pour this mixture over the oats and stir thoroughly until all oats are evenly coated.
- Form the Cookies: Using a cookie scoop or two tablespoons, drop portions of the dough onto the prepared parchment paper, spacing each cookie evenly apart.
- Prepare the Cocoa Drizzle: Whisk together the powdered sugar, cocoa powder, and 1-2 tablespoons of milk until smooth. Transfer this mixture into a zip-top bag, snip one corner, and drizzle over the formed cookies.
- Set and Store: Allow the cookies to cool completely at room temperature to set properly. Once set, store the cookies in an airtight container for up to one week.

- Use quick-cooking oats for the best texture; old-fashioned oats can make the mixture too dry or lumpy.
