Instructions
- Sauté aromatics: Heat olive oil in a large pot over medium heat. Add sliced onion and minced garlic and sauté until they become soft and fragrant, about 3-5 minutes.
- Cook vegetables: Add the diced potatoes, sliced carrot, and chopped red bell pepper to the pot. Cook the vegetables for about 5 minutes, stirring occasionally to prevent sticking.
- Add spices: Stir in ground cumin, ground coriander, smoked paprika, turmeric, salt, and black pepper thoroughly to coat the vegetables evenly with the spices.
- Add broth and chickpeas: Pour in the vegetable broth and add the drained chickpeas. Stir gently to combine all ingredients without mashing the chickpeas.
- Simmer stew: Cover the pot and reduce the heat to low. Let it simmer gently for 30 to 40 minutes, or until the potatoes are tender when pierced with a fork.
- Adjust seasoning: Taste the tagine and adjust the salt and pepper if needed to enhance the flavors before serving.
- Garnish and serve: Garnish the tagine with freshly chopped cilantro or parsley and serve warm with lemon wedges on the side for added brightness.
