Description

A hearty and flavorful Moroccan Potato Tagine featuring tender potatoes, chickpeas, and a blend of aromatic spices simmered to perfection. This vegetarian stew is a comforting and nutritious meal that captures the essence of North African cuisine with a warm, spiced broth and fresh herb garnish.

Ingredients

Scale

Vegetables

  • 2 large potatoes, peeled and diced
  • 1 large carrot, sliced
  • 1 red bell pepper, chopped
  • 1 yellow onion, sliced
  • 3 cloves garlic, minced

Pantry & Spices

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon smoked paprika
  • ½ teaspoon turmeric
  • Salt and black pepper to taste

Garnish & Serving

  • Fresh cilantro or parsley for garnish
  • Lemon wedges for serving

Instructions

  1. Sauté aromatics: Heat olive oil in a large pot over medium heat. Add sliced onion and minced garlic and sauté until they become soft and fragrant, about 3-5 minutes.
  2. Cook vegetables: Add the diced potatoes, sliced carrot, and chopped red bell pepper to the pot. Cook the vegetables for about 5 minutes, stirring occasionally to prevent sticking.
  3. Add spices: Stir in ground cumin, ground coriander, smoked paprika, turmeric, salt, and black pepper thoroughly to coat the vegetables evenly with the spices.
  4. Add broth and chickpeas: Pour in the vegetable broth and add the drained chickpeas. Stir gently to combine all ingredients without mashing the chickpeas.
  5. Simmer stew: Cover the pot and reduce the heat to low. Let it simmer gently for 30 to 40 minutes, or until the potatoes are tender when pierced with a fork.
  6. Adjust seasoning: Taste the tagine and adjust the salt and pepper if needed to enhance the flavors before serving.
  7. Garnish and serve: Garnish the tagine with freshly chopped cilantro or parsley and serve warm with lemon wedges on the side for added brightness.

Notes

  • This recipe is naturally vegetarian and can be made vegan by ensuring the broth is vegetable-based.
  • For added authenticity, serve with couscous or warm crusty bread.
  • Adjust spice levels according to your preference by modifying the quantity of smoked paprika or adding a pinch of chili flakes.
  • Leftovers can be refrigerated for up to 3 days and reheated gently on the stovetop.
