- Prepare Dry Ingredients: Whisk together the all-purpose flour, baking powder, sugar, and a pinch of kosher salt in a medium bowl until evenly combined.
- Prepare Wet Ingredients: In a small bowl, whisk together the milk, egg, melted and cooled butter, and vanilla extract until smooth and blended thoroughly.
- Combine Batter: Pour the wet ingredients into the dry ingredients and stir gently until just combined. It’s fine if the batter is a bit lumpy; overmixing can make the pancakes tough.
- Preheat and Cook Pancakes: Heat a griddle or non-stick skillet over medium heat until hot. Drop the batter by teaspoonfuls onto the griddle to form mini pancakes. Cook for 1 to 2 minutes or until bubbles form on the surface and then pop, leaving holes in the batter.
- Flip and Finish Cooking: Carefully flip the pancakes with a spatula and cook on the other side until golden brown. Remove the cooked pancakes from the griddle and repeat with the remaining batter.
