Instructions
- Preheat Oven and Prepare Pans: Preheat your oven to 400°F (204°C). Line two mini muffin pans with liners or grease them well to prevent sticking.
- Mix Batter: In a medium mixing bowl, combine 2 cups of Hungry Jack pancake mix with 1½ cups of water. Stir until just combined ensuring there are no large lumps. Then fold in the browned and drained 1 pound of breakfast sausage, 1 cup of shredded cheddar cheese, and ¼ cup of maple syrup evenly throughout the batter.
- Fill Muffin Pans: Using a spoon, evenly distribute the batter into the prepared mini muffin tins, filling each cup nearly full for the perfect bite-sized portions.
- Bake: Place the muffin pans in the preheated oven and bake for 15 minutes or until the mini griddle bites are lightly browned on top and fully cooked through. You can test doneness by inserting a toothpick into one of the muffins; it should come out clean.
