Ingredients
Scale
Meat and Seasoning
- 1 pound lean ground beef
- 1 packet (1 ounce) taco seasoning
- 1/2 cup water
Tortilla Base
- 6 medium-size flour tortillas
Bean and Sauce
- 1 can (16 ounces) refried beans
- 1 can (10 ounces) red enchilada sauce
Cheese and Toppings
- 1 cup shredded cheddar cheese
- 1 cup shredded pepper-jack cheese
- 1 Roma tomato (diced)
- 1 green onion (diced)
- 1 small can sliced black olives
Instructions
- Preheat and Crisp Tortillas: Preheat your oven to 375 degrees F. Lightly spray two baking sheets with non-stick spray and place 3 tortillas on each. Bake for 3 to 5 minutes, then carefully flip the tortillas while still in the oven and bake for an additional 2 to 5 minutes until they have a slight golden color. Remove and set aside.
- Cook and Season Beef: In a large skillet over medium-high heat, cook and crumble the ground beef until browned. Drain any grease. Add the taco seasoning and water, bring the mixture to a boil, then reduce heat to medium-low and simmer for 10 minutes while stirring occasionally. Remove from heat.
- Warm and Assemble Layers: Heat the refried beans in a microwave-safe bowl until warmed through. Spread a thin layer of beans on one tortilla, then top with one-third of the seasoned beef mixture. Place another tortilla on top of the beef. Spread 3 tablespoons of enchilada sauce evenly over the top tortilla. Sprinkle with cheddar and pepper-jack cheeses, then add diced tomato, green onion, and sliced black olives evenly on top.
- Repeat Assembly: Repeat the layering process with the remaining tortillas and ingredients to assemble 3 Mexican pizzas total.
- Bake and Serve: Arrange the assembled pizzas on a baking sheet and bake for 5 minutes, or until the cheese is melted and bubbly. Remove from the oven and let the pizzas cool slightly before slicing and serving. Enjoy your delicious Mexican pizza!
Notes
- Take care when flipping tortillas in the oven to avoid burns.
- Using lean ground beef reduces grease and keeps the pizza from being too greasy.
- You can substitute flour tortillas with corn tortillas for a gluten-free variation if preferred.
- Fresh toppings like tomato, green onion, and olives add texture and brightness to balance the rich flavors.
- Leftover pizzas can be reheated in the oven or microwave for a quick meal.
