Description

These light and fluffy pancakes are a delightful breakfast treat featuring juicy peaches mixed with brown sugar and cinnamon. The batter includes cream cheese for extra richness, and the peaches are incorporated both inside and as a tasty topping, served with honey and whipped honey butter for a sweet finish.

Ingredients

Scale

Peach Topping

  • 2 peaches, peeled and diced
  • 1 tablespoon brown sugar
  • 1 teaspoon ground cinnamon

Batter

  • 1 cup milk
  • 1/2 cup cream cheese, softened
  • 2 large eggs
  • 2 tablespoons oil
  • 2 cups pancake mix

To Serve

  • Honey, for drizzling
  • Whipped honey butter, for topping

Instructions

  1. Prepare Peach Mixture: Combine the peeled and diced peaches with the brown sugar and ground cinnamon in a bowl. Preheat a large griddle or frying pan over medium-high heat to get ready for cooking the pancakes.
  2. Make Pancake Batter: In a separate bowl, whisk together the milk, softened cream cheese, eggs, and oil until smooth and well combined. In a large mixing bowl, place the pancake mix and gently fold in the wet ingredients just until combined; some lumps are okay to keep the pancakes light and fluffy.
  3. Cook Pancakes: Lightly oil the griddle or frying pan. Pour about 1/4 cup of batter per pancake onto the surface. Immediately sprinkle approximately one tablespoon of the peach mixture onto each pancake. Cook until bubbles form on the surface and edges look set, then carefully flip and cook the other side until golden brown. Repeat the process with the remaining batter and peach topping.
  4. Serve: Plate the pancakes and drizzle them generously with honey. Top with additional sliced peaches and a dollop of whipped honey butter for an extra touch of sweetness and flavor.

Notes

  • Do not overmix the pancake batter to keep the pancakes tender and fluffy.
  • Use a non-stick griddle or lightly oil the pan to prevent sticking.
  • Peel peaches for a smoother texture; if preferred, leave the skin on for extra fiber.
  • Whipped honey butter can be made by blending softened butter with honey until light and airy.
  • Serve pancakes immediately for best texture and taste.
