Ingredients
Scale
For the crust
- 1 1/4 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon salt
For the lemon filling
- 2 large eggs
- 3/4 cup granulated sugar
- 1/4 cup fresh lemon juice
- 1 teaspoon lemon zest
- 1 tablespoon cornstarch
- 1/2 teaspoon baking powder
Instructions
- Preheat oven: Preheat your oven to 350°F (175°C) to prepare for baking the crust and tart.
- Make the crust: In a mixing bowl, combine the all-purpose flour, softened unsalted butter, powdered sugar, and salt. Mix until the mixture becomes crumbly and evenly combined.
- Press and bake crust: Press the crumbly mixture evenly into the bottom of a tart pan to form the crust. Bake in the preheated oven for 15-20 minutes, or until the crust is lightly golden brown.
- Prepare lemon filling: In a separate bowl, whisk together the eggs, granulated sugar, fresh lemon juice, lemon zest, cornstarch, and baking powder until smooth and well combined.
- Assemble tart: Pour the prepared lemon filling evenly over the baked crust in the tart pan.
- Bake tart: Return the tart to the oven and bake for an additional 20-25 minutes, or until the filling is set and firm to the touch.
- Cool and serve: Remove the tart from the oven and let it cool completely before serving. Optionally, dust with powdered sugar for an elegant finish.
Notes
- Ensure the butter is softened, not melted, for the best crust texture.
- Use fresh lemon juice and zest for the brightest flavor.
- Allow the tart to cool completely to achieve clean slicing.
- For a glossier top, you can brush the filling with a thin layer of apricot glaze after baking.
- Store leftover tart in the refrigerator and consume within 3 days.
