Instructions
- Sauté Onions: In a large pot or Dutch oven, heat olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened.
- Add Garlic and Bell Pepper: Add the minced garlic and diced bell pepper to the pot. Sauté for an additional 2-3 minutes until the vegetables are tender.
- Cook Meat: Increase the heat to medium-high and add the ground beef or turkey. Cook, breaking it up with a spoon, until browned all over, about 5-7 minutes. Drain excess fat if needed.
- Add Vegetables and Broth: Stir in the canned diced tomatoes with their juices, black beans, corn, and broth. Mix until well combined.
- Season the Soup: Add the chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper. Stir thoroughly to incorporate all the spices.
- Simmer: Bring the soup to a gentle boil, then reduce the heat to low. Cover and let it simmer for 20-30 minutes, stirring occasionally, to allow the flavors to meld.
- Add Lime Juice: Just before serving, stir in the fresh lime juice. Taste and adjust seasoning if necessary.
