  • 100 grams (about 3.5 oz) feta cheese, crumbled

Instructions

  1. Cook the farro: Rinse the farro thoroughly under cold water to remove any impurities. Boil it in salted water for 20 to 30 minutes until tender but still slightly chewy. Drain the farro and set it aside to cool.
  2. Blanch the green beans: Boil the trimmed and cut green beans in salted water for 3 to 4 minutes until they are vibrant green and just tender. Immediately transfer them to a bowl of ice water to stop the cooking process and preserve their bright color. Drain and pat dry.
  3. Combine salad ingredients: In a large mixing bowl, mix the cooled farro, blanched green beans, halved cherry tomatoes, and finely chopped red onion until well blended.
  4. Prepare the dressing: In a small bowl, whisk together olive oil, freshly squeezed lemon juice, salt, and pepper until emulsified and well combined.
