Description

These Gingerbread Rice Krispie Treats combine the classic gooey texture of traditional rice treats with the warm, festive flavors of gingerbread spices, molasses, and vanilla. Perfect for holiday gatherings or cozy winter snacking, these treats are easy to make and decorated with optional festive sprinkles for a cheerful finish.

Ingredients

Scale

Main Ingredients

  • 4 cups Rice Krispies cereal
  • 10 oz bag of mini marshmallows (approximately 6 cups)
  • 1/4 cup unsalted butter
  • 1/4 cup molasses
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Optional

  • Festive sprinkles for decoration

Instructions

  1. Prepare the baking dish: Line an 8×8 inch square baking dish with parchment paper or lightly grease it with butter or non-stick cooking spray. Set the dish aside.
  2. Melt butter and molasses: In a large saucepan over medium heat, melt the unsalted butter. Stir in the molasses and mix until fully blended and the mixture bubbles slightly.
  3. Melt the marshmallows: Add the mini marshmallows to the saucepan and stir continuously until they are completely melted and the mixture is smooth.
  4. Add spices and flavorings: Remove the saucepan from heat. Quickly stir in the ground cinnamon, ground ginger, ground cloves, ground nutmeg, vanilla extract, and salt until fully combined and smooth.
  5. Combine with cereal: Gradually fold in the Rice Krispies cereal, mixing until every piece is thoroughly coated with the marshmallow mixture.
  6. Transfer and press: Pour the mixture into the prepared baking dish. Use a spatula or buttered hands to gently press the mixture evenly into the pan, smoothing the top.
  7. Add decorations: If desired, sprinkle festive decorations or sprinkles on top while the mixture is still warm.
  8. Cool and set: Allow the treats to cool and set at room temperature for at least 1 hour. Once set, lift the whole block using the parchment paper and cut into squares for serving.

Notes

  • Make sure to work quickly when mixing in the cereal as the marshmallow mixture can harden fast.
  • For easier cutting, let the treats cool completely before slicing.
  • You can substitute butter with a dairy-free alternative for a lactose-free version.
  • Store treats in an airtight container at room temperature for up to 3 days to maintain freshness.
  • Adding sprinkles is optional but adds festive color perfect for holiday celebrations.
