Ingredients
Scale
Shrimp and Seasoning
- 20 large shrimp (peeled and deveined)
- 1 tablespoon olive oil (for sautéing)
- 3-4 cloves garlic (finely minced)
- ¼ teaspoon red chili flakes
- 1 tablespoon lemon juice (freshly squeezed)
- Salt (to taste)
- Pepper (to taste)
Zucchini Noodles
- 4 medium zucchinis (spiralized or julienned)
- 2 tablespoons fresh parsley (finely chopped)
Instructions
- Heat the oil: Warm 1 tablespoon of olive oil in a large skillet over medium heat to prepare for sautéing the shrimp and garlic.
- Sauté garlic and chili flakes: Add the finely minced 3-4 garlic cloves and ¼ teaspoon of red chili flakes to the skillet. Cook for 40-60 seconds until fragrant to infuse the oil with flavor.
- Cook the shrimp: Add 20 large shrimp to the skillet along with 1 tablespoon of freshly squeezed lemon juice. Season with salt and pepper to taste. Sauté the shrimp for about 3 minutes on each side until they turn pink and are cooked through.
- Remove shrimp: Once cooked, take the shrimp out of the skillet and set them aside to prevent overcooking while you prepare the noodles.
- Cook zucchini noodles: Add the prepared zucchini noodles to the skillet and increase the heat to high. Cook for 3-4 minutes, stirring occasionally, until the noodles are tender but still slightly crisp.
- Combine and season: Season the zucchini noodles with salt and pepper, toss well to coat evenly. Return the cooked shrimp to the skillet or serve them on the side according to your preference.
- Garnish and serve: Sprinkle the finely chopped fresh parsley over the dish for a burst of freshness and serve immediately while warm.
