Description

Crispy roasted chickpeas are a delicious and healthy snack option that can be customized with sweet, ranch, or spicy seasonings. These crunchy bites are easy to prepare by roasting canned chickpeas coated with olive oil and flavorful spices in the oven to achieve a satisfyingly crisp texture perfect for snacking or topping salads.

Ingredients

Scale

Chickpeas Base

  • 3 (15 oz) cans chickpeas
  • 1–2 tbsp olive oil

Sweet Seasoning

  • 1 tbsp maple syrup
  • ½ tsp cinnamon

Ranch Seasoning

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried dill
  • ½ tsp dried parsley
  • ½ tsp salt

Spicy Seasoning

  • ½ tsp chili powder
  • ½ tsp cumin
  • ½ tsp paprika
  • ½ tsp cayenne pepper
  • ¼ tsp garlic powder
  • ¼ tsp salt

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it reaches the perfect temperature for roasting chickpeas to a crispy texture.
  2. Prepare Chickpeas: Rinse the canned chickpeas thoroughly under cold water. Drain well and pat dry with a clean kitchen towel or paper towels. Let them air dry completely to remove excess moisture which helps in crisping.
  3. Initial Baking: Spread the dried chickpeas evenly on a baking sheet. Bake in the preheated oven for 20 to 30 minutes, stirring every 10 minutes to roast them evenly on all sides until they start turning golden and crunchy.
  4. Prepare Seasoning Mixes: While chickpeas are roasting, mix the seasonings for your desired flavor—sweet, ranch, or spicy—in separate small bowls for easy tossing later.
  5. Toss Chickpeas with Oil and Spices: Remove the hot chickpeas from the oven. Immediately toss them with 1 to 2 tablespoons of olive oil and your chosen seasoning mix until evenly coated.
  6. Additional Baking for Sweet Version: If using the sweet seasoning, return the chickpeas to the oven and bake an additional 5 to 10 minutes. This extra step helps the sweet coating caramelize slightly for enhanced flavor and crunchiness.
  7. Serve: Allow the roasted chickpeas to cool slightly. Serve fresh and crunchy as a healthy snack or a delightful topping for salads and bowls.

Notes

  • Ensure chickpeas are completely dry before roasting to maximize crispiness.
  • Stirring every 10 minutes promotes even roasting and prevents burning.
  • The sweet version requires additional baking to caramelize the maple syrup coating.
  • Roasted chickpeas are best enjoyed fresh but can be stored in an airtight container for up to 3 days.
  • Adjust spices to taste for milder or more intense flavors.
