- 10 pieces Pickles, sliced in half and seeded

Instructions
- Prepare the filling: In a medium bowl, combine the softened cream cheese, shredded cheddar, crumbled bacon, and garlic powder. Season with kosher salt and freshly ground black pepper to your taste and mix well until evenly combined.
- Stuff the pickles: Carefully halve the pickles lengthwise and use a spoon to scoop out the seeds from both halves. Fill each pickle half with the creamy bacon mixture, then press the halves back together securely to hold the filling inside.
- Wrap the egg rolls: Lay an egg roll wrapper on a clean surface in a diamond shape. Place a stuffed pickle in the center. Fold the bottom corner tightly over the pickle, then fold in the sides. Roll up gently but firmly, sealing the edge with a few drops of water to keep the wrapper closed. Repeat with the remaining pickles and wrappers.
- Heat the oil: Pour the vegetable oil into a large skillet to a depth of about 1 inch. Heat over medium heat until the oil bubbles gently and reaches approximately 350°F (175°C) for frying.
