Instructions
- Prepare Ingredients: Rinse the fresh raspberries under cold water and drain thoroughly. Measure out all the ingredients carefully to ensure balanced flavor.
- Blend Base: In a food processor or blender, add the cottage cheese, fresh raspberries, granulated sugar, vanilla extract, and lemon juice. Blend until the mixture is completely smooth and well combined.
- Whip Cream: In a separate chilled bowl, whip the heavy cream using an electric mixer on medium speed until stiff peaks form. This usually takes 3 to 5 minutes; avoid over-whipping to prevent the cream from turning buttery.
- Fold Mixture: Gently fold the whipped cream into the raspberry cottage cheese mixture using a spatula, carefully mixing to keep the mousse light and airy by retaining as much air as possible.
