Description

A creamy and fragrant Coconut Rice recipe that pairs perfectly with a variety of dishes. Made with basmati or long-grain rice, coconut milk, and a touch of salt, this simple yet flavorful side dish is enhanced with optional toasted coconut flakes and fresh basil for added texture and aroma.

Ingredients

Scale

Rice and Liquid

  • 1 ½ cups rice (basmati or other long-grain rice)
  • 1 ½ cups water
  • 1 cup coconut milk (full-fat)
  • 1 ¾ tsp salt (to taste)

Optional Garnishes

  • â…“ cup coconut (toasted, optional)
  • Basil (chiffonade, optional)

Instructions

  1. Rinse the Rice: Add rice to a fine mesh strainer and rinse under cool running water for 1-2 minutes, or until the water runs clear. Let drain thoroughly and allow rice to dry completely to remove excess surface starch.
  2. Combine Liquids and Bring to Boil: Pour water and coconut milk into a medium-sized pot and bring the mixture to a boil over medium-high heat. This ensures even cooking and blends the flavors well.
  3. Add Rice and Simmer: Once boiling, add salt to taste, then add the rinsed and drained rice. Bring back to a boil briefly, then reduce the heat to low. Cover the pot tightly and let the rice simmer gently for 20-25 minutes, checking at 20 minutes to see if the rice is fully cooked and tender.
  4. Finish and Serve: After cooking, turn off the heat and gently stir in toasted coconut flakes if using. Serve the coconut rice immediately, garnished with chiffonade basil for a fresh herbal note. Enjoy this creamy and aromatic rice dish as a perfect side to your meal.

Notes

  • Rinsing the rice removes excess starch and prevents the rice from becoming gummy.
  • Full-fat coconut milk provides the best richness and flavor; light coconut milk may result in a thinner texture.
  • To toast coconut flakes, spread them in a dry pan over medium heat and stir frequently until golden brown and fragrant.
  • Basil chiffonade adds a fresh and aromatic finish but can be omitted if unavailable.
  • Adjust salt amount according to taste and dietary preferences.
  • For fluffier rice, let it rest covered for 5 minutes after cooking before serving.
