Description

This Classic Macaroni Salad is a creamy, tangy, and flavorful side dish perfect for picnics, barbecues, and potlucks. Made with tender elbow macaroni, crunchy vegetables, and a zesty homemade dressing, it’s easy to prepare and sure to please a crowd.

Ingredients

Scale

Pasta

  • 3 cups uncooked elbow macaroni

Vegetables

  • 1/2 medium red onion, finely diced
  • 1 rib celery, finely diced
  • 1/2 green bell pepper, finely diced

Dressing

  • 1 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 3 tablespoons white vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons white sugar
  • 1/2 teaspoon granulated garlic
  • 1/2 teaspoon onion powder

Instructions

  1. Cook Macaroni: Cook the elbow macaroni in salted boiling water according to the package directions until al dente. Drain well and rinse under cold running water to cool the pasta and stop the cooking process.
  2. Prepare Dressing: In a separate bowl, whisk together mayonnaise, yellow mustard, white vinegar, salt, black pepper, white sugar, granulated garlic, and onion powder until the mixture is smooth and well combined.
  3. Combine Pasta and Half Dressing: Place the cooled macaroni in a large bowl and add half of the dressing. Add the finely diced red onion, celery, and green bell pepper. Toss gently to evenly coat the macaroni and vegetables with the dressing.
  4. Chill Salad: Cover the bowl tightly with plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld and the salad to chill completely.
  5. Finish and Serve: Before serving, add the remaining dressing to the salad. Toss gently again and adjust the seasoning as needed with additional salt or pepper.

Notes

  • For best results, prepare the salad at least 2 hours ahead or overnight to allow flavors to develop.
  • Use full-fat mayonnaise for a creamier texture, or substitute with yogurt for a lighter version.
  • Add hard-boiled eggs or diced pickles for extra flavor variations.
  • Make sure to rinse the cooked pasta well to cool and prevent overcooking.
  • This salad keeps well in the refrigerator for up to 3 days.
