Description

This decadent Chocolate Ice Cream Cake combines the rich, moist texture of homemade chocolate cake with creamy, smooth ice cream and a light whipped topping. Perfect for celebrations or a special dessert, this cake is easy to prepare and serves 12 slices, making it ideal for gatherings.

Ingredients

Scale

Cake

  • 1 box chocolate cake mix (15.25 oz)
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup water

Assembly

  • 1 quart ice cream (your choice of flavor), softened
  • 1 cup whipped topping

Instructions

  1. Preheat and prepare pans: Preheat your oven to 350°F (175°C) and grease two round cake pans to prevent sticking.
  2. Mix the batter: In a mixing bowl, combine the chocolate cake mix, eggs, vegetable oil, and water. Beat on medium speed for about 2 minutes until the mixture is smooth and well blended.
  3. Bake the cakes: Divide the batter evenly between the two prepared pans. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean indicating the cake is fully baked.
  4. Cool the cakes: Allow the cakes to cool in their pans for 10 minutes before transferring them to wire racks. Let them cool completely to ensure the ice cream does not melt during assembly.
  5. Assemble the cake: Place one cooled cake layer on a serving plate. Spread the softened ice cream evenly over the top. Add the second cake layer on top and, if desired, spread more ice cream over it for extra creaminess.
  6. Finish with whipped topping: Spread the whipped topping evenly over the entire cake to create a smooth, light finish. Freeze the cake until firm before serving for best results.

Notes

  • Use your favorite ice cream flavor to customize this cake.
  • Allow the ice cream to soften before spreading to make assembly easier.
  • Freeze the assembled cake for at least 2 hours to firm up before slicing.
  • For a firmer whipped topping, you can chill it before spreading.
  • Use cake flour or gluten-free cake mix if preferred for dietary needs.
  • Allow cakes to cool completely to prevent melting the ice cream during assembly.
