  4. Simmer Covered: Lower the heat to medium-low, cover the skillet, and let the mixture simmer gently, allowing the rice to cook and the chicken to become tender.
  5. Cook Through: Let it simmer for 15-20 minutes, stirring halfway through to prevent sticking and ensure even cooking of the rice and chicken.
  6. Melt the Cheese: Once the rice is tender and the chicken cooked through, remove the skillet from the heat. Stir in half of the shredded Mexican cheese blend to integrate creaminess throughout the dish.
