Ingredients
Scale
Meat
- ½ lb. ground turkey (93/7)
- ½ lb. ground sausage (mild)
Vegetables and Seasoning
- 1 sweet onion (small, finely diced)
- 1 green bell pepper (finely diced)
- 2 stalks celery (finely diced)
- 3 garlic cloves (crushed)
- 2 tsp. Cajun seasoning
- 16 oz. cauliflower rice
- ¾ tsp. salt (to taste)
- ¼ tsp. red pepper flakes (optional)
- Fresh parsley (optional, for garnish)
Oils
- 2 Tbsp. olive oil (divided)
Instructions
- Cook the meat: In a large skillet over medium heat, add the ground turkey and mild sausage. Sauté for 6-7 minutes until the meat is fully cooked through, breaking it apart with a potato masher or fork. Once done, transfer the meat to a paper towel-lined plate to drain excess fat.
- Sauté the vegetables: Add 1 tablespoon of olive oil to the same skillet. Add finely diced sweet onion, green bell pepper, and celery. Cook over medium heat for 5-6 minutes until vegetables become tender. Stir in crushed garlic and sauté for another 1 minute to release its aroma.
- Combine and cook cauliflower rice: Reduce the heat to medium-low. Add the remaining 1 tablespoon of olive oil, cauliflower rice, Cajun seasoning, salt, optional red pepper flakes, and the cooked meat back into the skillet. Stir thoroughly to mix all ingredients. Cover the skillet and cook for 7-8 minutes until the cauliflower rice softens and flavors meld together, stirring occasionally.
- Serve and garnish: Spoon the cauliflower dirty rice onto plates. Garnish with freshly chopped parsley and extra red pepper flakes if desired. Serve warm and enjoy this flavorful low-carb dish!
Notes
- You can adjust the heat level by increasing or omitting the red pepper flakes.
- For a vegetarian version, replace the meat with plant-based crumbles and use vegetable oil or butter.
- If you prefer a spicier dish, add extra Cajun seasoning or hot sauce to taste.
- Make sure to drain the cooked meat well to avoid excess grease affecting the cauliflower rice texture.
- Leftovers store well in the refrigerator for 3-4 days and can be reheated in a skillet or microwave.
