Ingredients
Scale
Ingredients
- 12 oz (340 g) pasta of your choice (e.g., penne, fusilli)
- 2 cups (200 g) broccoli florets
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 cup (240 ml) heavy cream
- 1 cup (100 g) cheddar cheese, grated
- 1/2 cup (50 g) parmesan cheese, grated
- Salt and pepper to taste
- Optional: Red pepper flakes for garnish
- Optional: Fresh parsley for garnish
Instructions
- Boil Pasta and Broccoli: Fill a large pot with water, add a pinch of salt, and bring to a boil. Add the pasta and cook according to the package instructions until al dente. During the last 2 minutes of cooking, add the broccoli florets to the pot. Drain both and set aside.
- Sauté Garlic: In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to let it burn.
- Make Cheese Sauce: Reduce the heat to low and pour in the heavy cream. Stir gently to warm the cream. Gradually add the cheddar cheese and parmesan cheese while stirring constantly until the cheese melts and the sauce is smooth.
- Season Sauce: Season the cheese sauce with salt and pepper to taste. Add red pepper flakes if you prefer a spicy kick.
- Combine Pasta and Sauce: Add the drained pasta and broccoli into the skillet. Toss everything until the pasta and broccoli are evenly coated with the cheese sauce.
- Serve: Remove from heat and serve immediately. Garnish with fresh parsley if desired to add a pop of color and fresh flavor.
Notes
- Make sure to not overcook the broccoli to keep it slightly crisp and vibrant.
- Use freshly grated cheese for a smoother melt and better flavor.
- For a lighter version, substitute heavy cream with half-and-half or milk but expect a thinner sauce.
- Feel free to add cooked chicken or bacon for extra protein.
- Red pepper flakes and parsley garnish are optional but add nice heat and freshness respectively.
