Instructions
- Preheat Oven: Preheat your oven to 425 degrees Fahrenheit to prepare for baking the taquitos.
- Warm Sausages: Heat a skillet over medium heat and cook the fully cooked sausage links just until warmed through. Remove the sausages from the skillet, but keep the grease in the pan for cooking the eggs.
- Scramble Eggs: In a bowl, whisk the eggs with water or milk if using, and season with salt and pepper to taste. Pour the eggs into the skillet with the sausage grease and cook over medium heat, stirring occasionally, until eggs are fully cooked and fluffy. If desired, add spinach while cooking for extra flavor and nutrients.
- Warm Tortillas: Heat tortillas, either in the microwave wrapped in a damp paper towel or quickly in a skillet, until they are soft and pliable. This will make rolling easier and prevent tearing.
- Assemble Taquitos: On each tortilla, distribute an even amount of scrambled eggs, then sprinkle with shredded cheese. Place one sausage link on top. Carefully roll each tortilla tightly around the filling and lay them seam-side down on a baking sheet lined with parchment or foil for easy cleanup.
- Bake Taquitos: Lightly spray the taquitos with cooking spray to help them crisp up in the oven. Bake in the preheated oven for 10-15 minutes, or until the tortillas are golden brown and crispy on the outside.
