Ingredients
Scale
Pasta and Cheese
- 8 oz Short Pasta (rotini or elbow macaroni)
- 1 cup Cheddar Cheese (grated, pepper jack can be substituted for spice)
Dressing and Creamy Base
- 1 cup Sour Cream (or substitute Greek yogurt for a lighter option)
- 1 cup Ranch Dressing (homemade or store-bought)
Protein and Toppings
- 6 slices Bacon (cooked until crispy)
- 1 cup Grilled Chicken (optional, diced)
Vegetables
- 1/2 cup Green Onions (chopped, chives as alternative)
- 1 cup Cherry Tomatoes (halved, optional)
- 1 cup Bell Peppers (diced)
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, about 8-10 minutes. Drain the pasta and let it cool slightly to room temperature.
- Cook the Bacon: Preheat your oven to 400°F (200°C). Lay the bacon slices on a baking sheet in a single layer and bake for approximately 25 minutes, or until the bacon is crispy. Remove from oven, let cool slightly, then chop into bite-sized pieces.
- Prepare the Dressing: In a mixing bowl, combine the sour cream and ranch dressing. Whisk until the mixture is smooth and fully blended.
- Combine Ingredients: In a large bowl, toss the cooked and cooled pasta with the chopped green onions, grated cheddar cheese, and half of the crispy bacon pieces. Add bell peppers and cherry tomatoes if using.
- Add the Dressing: Pour the ranch dressing mixture over the pasta and vegetable mixture. Toss everything gently but thoroughly until the pasta is fully coated with the dressing.
- Chill for Flavor: For best flavor, cover the salad and refrigerate for at least 30 minutes to allow the ingredients to meld together.
- Serve: Before serving, sprinkle the remaining bacon pieces on top for added crunch and flavor. The salad can be enjoyed chilled or at room temperature. Optionally, stir in grilled chicken for added protein before serving.
Notes
- Use Greek yogurt instead of sour cream for a lighter, healthier alternative.
- Substitute pepper jack cheese if you prefer a spicier flavor.
- The grilled chicken is optional but adds extra protein to make it a more substantial meal.
- Refrigerate the salad for at least 30 minutes before serving to enhance the flavors.
- This salad can be prepared a day in advance and stored covered in the refrigerator.
- If including cherry tomatoes, add them just before serving to keep them fresh and vibrant.
