- 2 lb chicken wings

- 1 tablespoon peanut oil
- 1 tablespoon Shaoxing wine
- 1 tablespoon light soy sauce
- 1 teaspoon ground ginger
- 1 teaspoon sugar
- 1 1/4 teaspoons salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon white pepper powder
Coating
- 2 tablespoons cornstarch
- 2 tablespoons all-purpose flour
For Cooking
- Oil spray
Instructions
- Marinate the Wings: In a large bowl, combine peanut oil, Shaoxing wine, light soy sauce, ground ginger, sugar, salt, garlic powder, and white pepper powder. Add the chicken wings, stirring to coat them evenly. Cover and refrigerate for at least 2 hours or overnight to allow the flavors to develop.
- Preheat the Air Fryer: Set your air fryer to 350°F (176°C) and allow it to preheat for a few minutes to ensure even cooking.
- Coat the Wings: In a separate bowl, mix the cornstarch and all-purpose flour. Drain the wings from the marinade slightly and coat each wing thoroughly with the flour mixture for a crispy finish.
- Arrange Wings in Air Fryer: Place the coated wings in a single layer inside the air fryer basket, making sure they are not overcrowded. Lightly spray the wings with oil to enhance crispiness during cooking.
- Air Fry the Wings: Cook the wings for 12 to 15 minutes, flipping them halfway through the cooking time to ensure even browning. They should be golden brown and crispy when done.
Notes
- For extra crispiness, pat wings dry with paper towels before marinating.
- Adjust salt according to your taste or dietary requirements.
- You can substitute Shaoxing wine with dry sherry if needed.
- Flip the wings carefully halfway through to maintain coating integrity.
- Serve immediately for the best texture.
